I adore the combination of peaches and blueberries almost as much as chocolate and raspberries, lol. Hint: after dunking the peaches into hot water, place in an ice water bath for less than a minute. The skin slips off far more easily, imho, no matter which variety of peach I've used. I make a "crumble topping" in the food processor (oats, brown sugar, flour, butter, nuts, whatever you wish) and store in the freezer. As long as I'm dirtying the processor it's worth making several cups. Then when your fruit favs are in season or available as IQF (individual quick frozen either at home or purchased) it's so quick and easy. I was given a peach cobbler recently though yours looks much more appealing with the blueberries. Thanks for the reminder of this wonderful combo!

Sooo good! I used 4 peaches and 2.5 cups of blueberries, and cut the rest of the recipe in half, and it more than served four. Yum! Looking forward to leftovers for breakfast!

Uh yum! I'm OBSESSED with fruit cobblers now and peaches are divine IF (and I mean IF) their skin is removed. That fuzziness really freaks out my tongue. I appreciate the words of advice on peeling. I'll need to keep the heat factor in mind! Don't want to find myself flinging peaches across the room!
